Banania Muffins

Ingredients:

For the muffins :

  • 120g flour 
  • 2 eggs
  • 2 tablespoons milk
  • 1 packet of vanilla sugar
  • 1 packet of dry yeast
  • 50g butter
  • 60g sugar
For the fondant :

  • 100g thick crème fraiche 
  • 5 tablespoons Banania
  • 1 tablespoon of sugar 

 

  1. Start by preheating the oven to 180°C (thermostat 6).
  2. In a large bowl, mix together all the muffin ingredients and pour into 6 moulds on a muffin tin, filling to ¼ height. Let stand.
  3. Meanwhile, prepare the fondant.
  4. Mix the crème fraîche, the Banania powder, and the sugar, and heat for 5 minutes, stirring gently.
  5. Pour a teaspoon of fondant into each mould, and then cover each again with the rest of the muffin mix.
  6. Bake the muffins for 15 minutes.
  7. Once cooked, remove them from the moulds and enjoy them still warm.

Crème fraiche is usually classed within the dairy products family, yet, even though it is made from milk, its high lipid content and low calcium levels mean that it is actually a kind of butterfat!

If you want to decrease the amount of fats in this dessert, just replace the crème fraiche with a dairy product (plain fromage blanc, plain yogurt, etc.); that will also add calcium.
